Heat a wok with a little vegetable oil until just smoking. Add a large pinch of ginger julienne and a few pieces of oyster mushroom, next add a teaspoon of garlic puree and cook for a couple seconds before adding about 50ml of chicken stock. Next add the beans, mange tout and broccoli, cook for about 40 seconds and then season with the soy sauce, oyster sauce and sugar. Finish with a handful of bean sprouts and serve.
